Quick answer. Grinding pepper needs turning force at low speed, not blade speed. Cheap Ghanaian-market blenders use high-torque motors with narrow, steep jars, which is exactly right for pepper, ginger and groundnut. Expensive smoothie blenders optimise for speed in a wide jar, which whips soft fruit beautifully and stalls on a dry chilli. This is why a GHS 280 machine out-grinds a GHS 900 one on the job you actually do.
The moment this matters
It is six in the morning. You have half a bowl of dried pepper, ginger, garlic and a little onion, and you want it ground before the children wake. You switch on, the motor screams, and the pepper sits at the top of the jar spinning around the blade without ever meeting it. You add water you did not want to add. That is not a bad blender. That is a blender built for a different job.
Torque and speed are not the same thing
Every motor trades one for the other. Speed is how fast the blade spins. Torque is how hard it keeps spinning when something resists it.
Soft fruit offers almost no resistance, so a smoothie machine can chase speed. Dried pepper, ginger and groundnut are hard and dry. They resist. The moment a high-speed low-torque blade meets them it slows, and a slowing blade cannot cut. You hear it as the motor note dropping, then you hear it rise again as the blade spins free in a pocket of air it has carved for itself.
A high-torque motor does the opposite. It turns slower and refuses to be stopped. It keeps chewing.
The jar matters as much as the motor
This is the part almost nobody is told. A smoothie jar is wide at the base so liquid can circulate. A grinding jar is narrow and steep, so gravity keeps feeding dry material back down onto the blade instead of letting it climb the walls.
Look at the two jars side by side on the shelf. The one that looks cheap and narrow is the one that will grind your pepper dry, without added water, which is what you want if you are making shito or storing a batch.
The number to look at instead of wattage
The wattage printed on the box is a peak marketing figure. We have covered why in a separate piece: a Ghanaian 13A socket can deliver at most 2,990W, so any blender claiming 4500W or 8000W is quoting something that cannot physically happen in your kitchen.
What to look at instead:
- Jar shape. Narrow and steep for dry grinding. Wide for drinks.
- A separate dry mill. The small cup with the flat blade. If it has one, it is built with grinding in mind.
- The coupling. The part joining motor to jar. Metal outlasts plastic by years on a machine used daily.
- Weight. A heavier base usually means more copper in the motor, which usually means more torque.
What we found on the ground
In July 2026 we priced 2L commercial-style blenders with a dry mill across Accra dealers. The working range was GHS 280 to GHS 340. The same shelves carried imported smoothie machines from GHS 850 upward that grind soft fruit better and dry pepper worse.
If your kitchen mostly makes pepper, shito, ginger and groundnut, the cheaper machine is not a compromise. It is the correct tool, and you keep the difference.
Who should buy which
Buy the commercial-style grinder if you cook Ghanaian food daily, make shito in batches, or sell food. It will grind dry, and the metal coupling survives daily use.
Buy the smoothie machine if you mainly make drinks, smoothies and soups, and grind pepper only occasionally with a little water.
Check it before you pay
When the rider reaches you, before any money changes hands: lift the base and feel the weight, turn the jar to check the coupling is metal and seats firmly, and run it empty for five seconds to hear whether the motor note is steady. If anything is not as described, do not pay. That is the whole point of pay on delivery.
